VOLO DI FARFALLE
GRAPE VARIETY: Moscato
HARVEST: Beginning of September, traditional harvest with manual selection of grapes.
NUMBER OF BOTTLES PRODUCED: 20.000
WINEMAKING: Soft pressing and cold clarification. Fermentation at controlled temperature with the use of selected yeasts for about 15 days in soft pressure. The must is kept cold in tanks at controlled temperature. Malo-lactic does not take place.
AGEING: Wine bottled while young
ANALYTICAL INFO: Alcohol content: approx 5,50%Vol;
TASTING NOTES: Moscato coming from the historic heart of this vine, it has a light-yellow color. Bouquet of mountain flowers, sage, and rosemary, strong and original personality, final of good ripe fruit. In-mouth the presence of bubbles is not aggressive and the wine is rightly sweet and never cloying.
SUGGESTION: It pairs well with desserts, fruit, soft cheeses and short snacks. It should not be underestimated in combination with slightly spicy, oriental meals. It is advisable to keep the wine in a cool place, away from light at a temperature of about 10-12°C. Drink it preferably young and serve it in a cup or dessert glass at a temperature of about 4-6°C.
CURIOSITY: The name for this wine came spontaneously when, during the harvest, passing through the rows full of Moscato grapes, you see many butterflies with so delicate colors such like white, blue and yellow. This wine, in fact, brings to mind the memory of a light flight in a romantic world of ethereal colors and scents through which butterflies juggle. The butterflies fly well represents the typical character of Moscato wine, light, delicate but above all fine and elegant.
